make fun d•t muffins • •
Surprises are fun. And, we put a lot of colorful surprises inside our muffins. A lot of dots! Jelly beans! We had to bake our dot muffins a few times in our home test kitchen before they were just delightful to share—and, that meant a lot of taste testing! We like this idea for spring, Easter celebrations, and birthday parties—

Add to a large mixing bowl:
2 cups whole wheat pastry flour*
2 teaspoons baking powder
1/4 teaspoon salt
Melt 1/4 cup butter in a small saucepan. Remove from heat. Add 1/4 cup honey and 1 cup unsweetened applesauce. Whisk.
Make a well in the dry ingredients. Crack 1 egg in the center of the well. Whisk just the egg, without mixing in the dry ingredients. Add the honey butter mixture. Using a spatula, fold wet and dry ingredients together, until almost blended.
Brush 1/2 cup jelly beans (we used all-natural jelly beans) lightly with oil. We used a pastry brush dipped in safflower oil. Next, coat the jelly beans with flour. This step will keep the jelly beans from sinking to the bottom of you muffins while baking. Add the flour coated jelly beans to the batter. Using a spatula, fold in just until jelly beans are incorporated. Let batter rest 30 minutes.
Spoon batter into muffin cups lined with paper or foil cupcake liners. Bake 18-20 minutes at 375°F. Cool on a wire rack.
*Whole wheat pastry flour has a lighter texture than regular whole wheat flour. It is still 100% whole grain, but is made from a different type of wheat. I prefer it's tender texture for baking muffins and pancakes.
We iced the top of our cooled muffins with—
honey sweetened cream cheese icing ••
Using a handblender, whip 4 oz. cream cheese (regular, not whipped) with 3 tablespoons honey and 1 tablespoon cream.
We topped our fun muffins with more jelly beans. Then, we placed our muffins into our cupcake wrapper printables—They come in brights, stripes, pastels—and of course, dots and more dots! ©heather cahoon • you make do™
